Benihana s first restaurant was opened in New York in 1964 by Rocky Aoki and has developed into an extremely popular family restaurant chain ever since. Their food is famous and here we can teach you their secret recipe to getting the perfect Benihana fried rice. You will need:
4 cups cooked converted or parboiled rice (1 cup uncooked)
1 cup frozen peas, thawed
2 tablespoons finely grated carrot
2 eggs, beaten
1/2 cup diced onion (1/2 small onion)
1 1/2 tablespoons butter
2 tablespoons soy sauce
Salt
Pepper
Cook the rice by bringing 2 cups water to the boil adding the rice and pinch of salt. Reduce the heat, cover the saucepan and simmer for 20 minutes. Pour rice into a large bowl to let it cool in the refrigerator.
Scramble the eggs in a small pan over a medium heat. While cooking, separate the egg pieces into smaller chunks (about the size of a pea).
When the rice has cooled to room temperature, add diced onion, peas, grated carrot and the scrambled egg to the bowl. Toss all the ingredients together.
Melt 1 tablespoons butter in a large frying pan or wok over a medium/high heat. Once the butter has melted, tip in the contents of the bowl of rice. Then, add the soy sauce and season with salt and pepper. Cook the rice for 6-8 minutes, stirring regularly.
So, that is it, delicious rice without too much fuss! If you are cooking the rice ahead of time, this Benihana fried rice recipe is still suitable for you. Perhaps you are having a lot of people round for some food and want to do as much preparation the day before as you possibly can so that you re not panicking on the day. No problem.
Just cook the rice then add the peas, carrots and egg plus half the soy sauce. Keep this refrigerated, then when you are ready for it, fry it in the butter then add the salt, pepper and the rest of the soy sauce. It s like having Teppenyaki style food made in your own kitchen.
